I’m starting to think that I would just love to do everything ahead of time. It would just simplify my life. Like these overnight oats. Mornings can sometimes (or all the time- haha) be crazy. Solution? Make breakfast the night before! That way, there are no excuses.

I received a copy of this cookbook a little while back, and while flipping through the pages, I was immediately drawn to this Raspberry Overnight Oats Recipe. Maybe it was the raspberries, or maybe it was the chopped pistachios on top. But I knew I needed to make it. I did adapt the recipe slightly, adding in some Greek yogurt because I love the creaminess it brings, but the recipe was even so good just as it is. And I love that you can sub in different berries if you wanted to, as well.
This cookbook is actually full of recipes that I would love to try – everything from Butternut Squash Spaghetti to Homemade Fig Bars. Most of the recipes have photos, and all of the recipes have nutritional information, which I loved having access to. I think this cookbook is a great cookbook for those who are looking for healthier recipes that are anything but boring.

For this Raspberry Overnight Oats recipe, you will need:
- fresh raspberries
- honey
- old fashioned oats
- pumpkin pie spice
- milk
- vanilla Greek yogurt
- chopped pistachios
If you don’t have fresh raspberries, you can use frozen, or you can use the fruit of your choice. The possibilities are endless!
How to make overnight oats
For most overnight oats recipes, you will simply just mix all of the ingredients together, and let it sit in the refrigerator overnight.
For this version, the only difference is that you will mash up some of the raspberries. But it really is as simple as just mixing together a few ingredients!

Raspberry Overnight Oats Recipe
Ingredients
- 3/4 cup fresh raspberries divided
- 1 tablespoon honey
- 1 1/4 cups rolled oats
- 1 teaspoon pumpkin pie spice
- 3/4 cup 2% milk
- 1/4 cup vanilla Greek yogurt
- 2 tablespoons pistachios roughly chopped
Instructions
- Place 1/2 cup of the raspberries and the honey in a bowl. Crush the raspberries and honey together roughly with the back of a fork. Add the oats, pumpkin pie spice and milk. Stir to combine.
- Divide the mixture between 2 bowls or jars and cover. Refrigerate overnight.
- When ready to serve, stir half of the Greek yogurt into each bowl. Top the oatmeal with the remaining raspberries. Sprinkle the pistachios over the top.
