It doesn’t get much easier than this Ricotta Gnocchi with Tomato Sauce. Gnocchi is cooked and combined with a simple tomato sauce and ricotta.
This recipe is one of those that falls under “this is so easy you don’t even need a recipe”. But this is a perfect recipe to have on hand for one of those nights when you have 15 minutes to get dinner on the table. I know that December is a super busy month – so these kinds of recipes really come in handy right now!! All it takes is a few simple ingredients, and dinner is finished with very little effort. And not only is it easy, but it’s super family friendly, too!
This recipe uses tomato sauce as the base, but if you have leftover marinara in the fridge, this is a great place to use that. And you can add things and make it your own. But even just the basic recipe is delicious and perfect for a weeknight. It really doesn’t get much easier!

Ingredients
- 1 lb gnocchi
- 1 tablespoon extra virgin olive oil
- 1 clove garlic (finely minced or grated)
- 1 8 oz can tomato sauce
- 3 tablespoons ricotta cheese
- fresh parsley (for serving)
Instructions
- Bring a large pot of water to a boil. Add the gnocchi and let it cook until it floats up to the top of the water, 3-5 minutes. Remove with a slotted spoon to a bowl and set aside.
- Heat the olive oil in a large sauté pan. Add the garlic and cook until fragrant, about 30 seconds. Pour in the tomato sauce and cook until it is warmed through, about 3 minutes.
- Remove the pan from the heat and add the ricotta. Stir until combined, then stir in the gnocchi.
- Serve topped with a little bit of chopped parsley.

I LOVE gnocchi. We make it then saute it in browned butter. So very good! But this tomato sauce would be a great choice for winter. (It's so cold here!)
