Filled with roast beef, melty cheese, an easy slaw, and a horseradish mayo, this Roast Beef Panini is a 5 star homemade sandwich! Ready in no time at all, it’s perfect for lunch or for an easy dinner.

Whenever I can’t figure out what to make for dinner, I often turn to sandwiches. In my family, you can never go wrong with sandwiches.
Now I will admit that my husband and I probably liked these Roast Beef Paninis more than the kids, (my kids aren’t big horseradish fans), but I would happily eat one of these for lunch or for dinner anytime.
There are a few different components, but I promise it all comes together quickly for an easy and fast dinner recipe!
Ingredients
For the Slaw:
- Coleslaw Mix: I like to buy the coleslaw mix that has green cabbage, red cabbage, and carrots. You could just thinly slice some cabbage, as well.
- Mayonnaise: I like to use light mayonnaise on these sandwiches, although regular mayo could be used, as well.
- Mustard: I just use regular yellow mustard, but you could use a dijon or brown mustard.
- Celery Salt: I love a little bit of celery salt in slaw. If you don’t have any, just make sure to season the slaw well with salt.
For the Horseradish Mayo:
- Mayonnaise: Again – feel free to use light mayonnaise here!
- Sun-Dried Tomatoes: I use oil-packed sun dried tomatoes, but you could also use dried sun dried tomatoes.
- Horseradish: Make sure you are using just horseradish. It’s usually labeled as prepared horseradish. It will sometimes have salt or vinegar, but should be mostly horseradish. You don’t want a horseradish sauce, which is typically like a premade horseradish mayo.
- Garlic Powder: Just to add flavor!
- Red Pepper Flakes: I like to add a little bit of heat with red pepper flakes. Add more or less, depending on how much spice you like.
For the Sandwich:
- Bread: I like to use a heartier bread, like a sourdough. I usually try to find sandwich bread sized sourdough, but for these photos, I used a loaf that I cut into slices, so the sandwiches are smaller than normal. But you do have enough to make 4 full sized sandwiches.
- Red Onion: This just gives some extra flavor.
- Roast Beef: If possible, get freshly sliced deli roast beef, and have them slice it very thin.
- Cheese: I like to use Colby-jack, but feel free to use your favorite cheese. And I like to put 2 slices each sandwich, so I look for thin sliced cheese.
- Butter: This is just for buttering the outsides of the sandwich for grilling.
How to Make a Roast Beef Panini
STEP 1: Make the slaw by mixing all of the slaw ingredients together. Make sure to taste it and add salt and pepper, as needed.
STEP 2: In another bowl, stir all of the horseradish mayo ingredients together. Set this aside for now.
STEP 3: It’s time to assemble! I like to do all 4 sandwiches at the same time, but you can do them one by one. Lay out your bread, and spread the mayo on each side of the bread. (You might have extra, depending on how much you like.)
STEP 4: Add a slice of cheese to each piece of bread, on top of the mayo.
STEP 5: Take your roast beef and add it to one side of each sandwich.
STEP 6: Then add on some sliced onions.
STEP 7: Add some of the slaw to each sandwich. It might seem like a lot, but we liked a good amount of slaw on each sandwich.
STEP 8: Butter the outsides the bread, and cook on a hot panini press.
Tips and Tricks
- The amount of horseradish added in the recipe will give the sandwiches a good kick of flavor. If you aren’t a huge horseradish fan, you’ll want to use less horseradish.
- These sandwiches are messy – but worth it!
- If you don’t have a panini press, just cook the sandwich like you would a grilled cheese sandwich, using a skillet. Cook on one side, then flip and cook the second side.
- We like to keep things simple and serve these with potato chips. Or if I’ve got extra time, make some Baked French Fries.

Roast Beef Panini
Ingredients
Slaw
- 3 cups coleslaw mix
- 4 tablespoons light mayonnaise
- 2 teaspoons mustard
- 1/2 teaspoon celery salt
Horseradish Mayo
- 1/2 cup light mayonnaise
- 2 tablespoons minced oil-packed sun-dried tomatoes
- 1 tablespoon prepared horseradish
- 1/4 teaspoon garlic powder
- Pinch of red pepper flakes
Sandwiches
- 8 slices bread
- Thinly sliced red onion
- 8 oz thinly sliced deli roast beef
- 8 slices thin-sliced Colby-jack cheese
- 4 tablespoons butter softened
Instructions
- In a bowl, combine the slaw ingredients and mix to combine. Set aside.3 cups coleslaw mix, 4 tablespoons light mayonnaise, 2 teaspoons mustard, 1/2 teaspoon celery salt
- In another bowl, mix together the horseradish mayo ingredients. Set aside.1/2 cup light mayonnaise, 2 tablespoons minced oil-packed sun-dried tomatoes, 1 tablespoon prepared horseradish, 1/4 teaspoon garlic powder, Pinch of red pepper flakes
- Preheat a panini press or a skillet.
- Assemble the sandwiches by laying the slices of bread on a surface. Spread some of the mayo on each slice, then top each with a slice of cheese.8 slices bread, 8 slices thin-sliced Colby-jack cheese
- Divide the roast beef into four portions and place a portion on the top of 4 of the slices of bread. Top with the red onions and the slaw.8 oz thinly sliced deli roast beef, Thinly sliced red onion
- Place the remaining 4 slices on top to form 4 sandwiches.
- Spread the outside of each sandwich with the butter.4 tablespoons butter
- If using a panini press, grill one or two sandwiches at a time until the cheese is melted and the sandwich is golden brown. If using a skillet, add the sandwiches and cook until the bread is golden, then flip and cook the second side.
- Cut in half to serve.
