Roast beef, cheese, creamy horseradish mayo, and caramelized onions come together in these Roast Beef Sliders that bring flavor to the dinner table. These are great for a weeknight dinner, or for game night or tailgating.

One of our favorite things to make for dinner are sliders. I think mostly because not only are they delicious, but there are so many different flavor combinations.
These Roast Beef Sliders are one of my current favorites.
Roast beef. Cheese. Horseradish mayonnaise. And caramelized onions.
How could you go wrong?
These are definitely packed with flavor, and are a great sandwich to add to the recipe rotation!
Ingredients
- Onions: I like to use sweet onions. They will caramelize better and have a bit more sweetness. I have caramelized yellow onions, and they will work, but I do prefer sweet onions.
- Olive Oil: This is for cooking the onions. You could use butter, or you could use half oil and half butter.
- Mayonnaise: Light or regular mayonnaise will work.
- Horseradish: This is just horseradish, not a horseradish spread. You should be able to find this at most grocery stores. If you are sensitive to horseradish, you can definitely cut back on the amount, or even leave it out altogether. But it does go really well with the roast beef!
- Rolls: I prefer to use the Hawaiian rolls because I like the hint of sweetness, but feel free to use savory rolls, if desired.
- Cheese: My family is not huge on Swiss cheese, so we use Provolone. I know that Swiss is more commonly paired with roast beef, so feel free to use either.
- Roast Beef: My biggest hint with the roast beef is to get it freshly sliced from the deli, and have them slice it the thinnest that they can. I have just layered the roast beef before, but I much prefer it when you can bunch up each slice, and that works best with the thin sliced meat.
- Butter: I use unsalted butter.
- Mustard: I use Dijon mustard, but a grainy mustard or brown mustard would work.
- Parsley: I really like using fresh parsley for the topping. If you do need to use dried parsley, you’ll only need about a teaspoon.
- Garlic Flakes: This is also sometimes listed as dried minced garlic.
- Onion Powder: This just gives a little bit extra onion flavor.
How to Make Roast Beef Sliders
STEP 1: The onions will take the longest to make, so get them started first. Cut the onions in half, and then into half moons.
STEP 2: Heat the olive oil in a skillet, then add the onions. You don’t want to cook them too high – low and slow is the best way to get them caramelized. Cook them, stirring often, until they are caramelized. This should take about 20 minutes.
STEP 3-8: To assemble, cut the rolls in half horizontally. Mix the mayonnaise and the horseradish, and spread half on the bottom. Then layer half of the cheese, the roast beef, the onions, and then the rest of the cheese. Spread the remaining mayonnaise on the cut side of the top half of the rolls, then place them on top.
Mix together the butter, mustard, parsley, garlic flakes, and onion powder. Brush this evenly over the top of the rolls.
Cover with foil and bake the sandwiches for 20 minutes, then remove the foil and cook an additional 5 minutes.
Tips and Tricks
The caramelized onions take the most time for this recipe, but they can be made ahead of time if needed. Just make them, then store them in the refrigerator until needed.
You can also assemble the sandwiches earlier in the day, and then bake them when it is time for dinner.
Store any leftovers in the refrigerator. We like to just microwave the leftovers.

Roast Beef Sliders
Ingredients
- 2 medium sweet onions
- 2 tablespoons extra virgin olive oil
- 1/2 cup mayonnaise
- 1 tablespoon horseradish
- 1 (12-count) package King’s Hawaiian or Savory Butter Rolls
- 8 oz sliced provolone cheese
- 3/4 lb thinly sliced deli roast beef
- 1/4 cup butter melted
- 1 tablespoon dijon mustard
- 1 tablespoon chopped fresh parsley
- 1 teaspoon garlic flakes
- 1/4 teaspoon onion powder
Instructions
- Peel the onions, cut in half, and then slice into half moons.
- Heat the olive oil in a skillet over medium-low heat. Add the onions and a little bit of salt. Cook, stirring often, until the onions are caramelized. This should take about 20 minutes. You want to cook them low and slow.
- While the onions are cooking, preheat the oven to 375ºF. Spray a baking dish with nonstick cooking spray.
- In a small bowl, mix the mayonnaise and the horseradish together.
- Use a serrated knife to cut the rolls in half horizontally, keeping them connected. Place the bottom half of the rolls in the prepared baking dish. Spread half of the mayonnaise mixture over the bottom.
- Layer half of the cheese over the mayonnaise, followed by the roast beef. The top with the caramelized onions. Top with the remaining cheese.
- Spread the remaining mayonnaise mixture on the cut side of the top half of the rolls, then place the tops, cut side down, over the cheese.
- In another bowl, mix together the butter, Dijon, parsley, garlic flakes, and onion powder. Brush the mixture over the tops of the rolls. Cover the dish with foil.
- Bake in the preheated oven for 20 minutes, then remove the foil and cook an additional 5 minutes.
- Cut the sliders before serving.
