These Buffalo Chicken Tacos are filled with all of your favorite buffalo chicken flavors, and they can be on the table in less than 30 minutes!

We love buffalo anything. (Hello, Buffalo Chicken Sandwiches and Buffalo Chicken Pizza!)
And we love taco night.
Combine those 2, and less than half an hour later, you have these Buffalo Chicken Tacos on the table for dinner. These tacos taste fresh and are something a little different to spice up your normal taco night!
Ingredients
- Chicken: I like to use boneless, skinless chicken breasts. But chicken thighs would work, as well.
- Salt and Pepper: I can never emphasize how important seasoning your food is! Make sure and give the chicken a quick seasoning with salt and pepper before cooking.
- Olive Oil: I used extra virgin olive oil, but you could use another cooking oil – like avocado, vegetable, or canola.
- Buffalo Sauce: There are several different buffalo sauces on the market – just use one you love. I usually grab Franks Red Hot Buffalo Sauce.
- Blue Cheese: I usually like to buy the blue cheese that is in a block instead of already crumbled because the crumbled cheese tends to get dried out. But really, either should work for this recipe.
- Mayonnaise: Low-fat mayonnaise is actually really good here because it is a little bit thinner. But full fat can also be used.
- Water: This is just to thin out the sauce to make it easier to add to the tacos.
- Tortillas: We use flour tortillas, but you can definitely use corn tortillas if that is what you prefer!
- Toppings: Feel free to make this your own, but we used lettuce, carrots, and radishes.
How to Make Buffalo Chicken Tacos
Step 1: Make the chicken but cutting it into bite-sized pieces, then seasoning with salt and pepper. Heat the oil in a skillet, then add the chicken and cook, stirring as needed, until the chicken is browned and cooked through. Turn the heat off, then add in the buffalo sauce.
Step 2: Make the blue cheese sauce by combining the blue cheese, mayonnaise, and water in a blender, then puree until smooth.
Step 3: Heat a clean skillet and add a tortilla. Cook until the tortilla is browned, then flip for the second side. Continue with the rest of the tortillas.
Step 4: Assemble the tacos by adding some of the buffalo chicken to each tortilla, along with lettuce, carrots, and radishes. Drizzle the blue cheese sauce over the top.
Tips and Tricks
- If you have some cooked, shredded or cubed chicken on hand, you can use that and this recipe is even faster! Just heat it up and add the buffalo sauce.
- If you have a gas stove, you can use tongs to hold the tortillas over the flame to char the tortillas.
- While these are super fast and easy to make, you can make it even easier by making each component ahead of time so you just need to reheat the chicken and assemble the tacos when it is time for dinner.

Buffalo Chicken Tacos
Ingredients
- 1 pound boneless skinless chicken breasts
- salt and pepper
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons buffalo sauce
- 2 ounces blue cheese
- 3 tablespoons reduced-fat mayonnaise
- 2 tablespoons water
- 8 (6-inch) soft flour tortillas
- 4 cups shredded green-leaf lettuce
- 6 radishes thinly sliced
- 2 carrots shredded
Instructions
- Cut the chicken into bite-sized pieces. Season with salt and pepper. Add the olive oil to a large skillet and heat over medium heat. Add the chicken and cook until browned and cooked through. Turn off the heat and stir in the buffalo sauce.
- Meanwhile, in a blender or food processor, combine the blue cheese, mayonnaise and water. Process until smooth.
- Heat a large, dry skillet over high heat. Add the tortillas, one or two at a time (depending on the size) and cook until browned and/or charred. You can also hold them directly over a flame if you have a gas stove.
- Lay the tortillas on a work surface. Top each tortilla with some of the lettuce, radishes and carrots. Top with some of the buffalo chicken. Drizzle the blue cheese sauce over the top and serve.
