If you’re looking for a delicious slow cooker meal that is hearty and filling, this Slow Cooker Pepper Steak is for you!
Filled with chunks of beef in a smooth, flavorful sauce, and packed with lots of peppers and onions, this is the perfect family dinner. Prep time is fairly minimal, and it’s a great any time of year!
Ingredients
- Oil: You want a good oil for browning the steaks. I used olive oil, but another neutral oil will work, as well.
- Beef: I use beef sirloin for this recipe. You don’t need fancy steak here, and the sirloin does the job quite well in the slow cooker.
- Cornstarch: This will help to thicken up the sauce a bit.
- Soy Sauce: I like to use a low sodium soy sauce.
- Brown Sugar: The brown sugar gives the sauce a little bit of sweetness, but it is not overly sweet at all.
- Rice Vinegar: This is to add in some acidity and balance the flavors.
- Garlic & Ginger: I like to use fresh garlic and ginger. You can sub in dried, but fresh will give you the best flavor.
- Vegetables: You will need an onion, and lots of peppers. My peppers here were a little smaller, so I used 6 full peppers, but I would say if they are big to use 4. You can really use any color you want, but I tend to grab red, orange, or yellow for this recipe.
- Broth: You’ll need some beef broth for the sauce.
- For Serving: To serve, you’ll want some prepared rice as well as some fresh cilantro. I also like to add on some sesame seeds.
How to Make Slow Cooker Pepper Steak
STEP 1: Heat the oil in a skillet (I use my cast iron skillet) and brown the steaks. I do this in batches.
STEP 2: Remove the steak to a cutting board, and cut it into strips. I keep them fairly big – 1/2 inch to 3/4 inch thick. If you make them smaller, they will just cook faster.
STEP 3: Add the steak to the slow cooker, then sprinkle 3 tablespoons of the cornstarch over the beef and toss to coat it. Then add in the soy sauce, brown sugar, rice vinegar, garlic, and ginger. Cook on low for 2 hours.
STEP 4: After 2 hours, add in the onion and bell peppers. Stir everything together, then cover and cook another 1 1/2 hours.
STEP 5: Mix the remaining tablespoon of cornstarch with the beef broth and add this to the slow cooker. Cook for 30 more minutes. Then you are ready to serve!
Tips and Tricks
- You can add the onion and pepper at the beginning of the cook time, but they will get very soft. I like adding them halfway through so that they still have some structure when it’s time to eat.
- If you cut your steak thinner, it will cook faster. You still want to make sure that you have enough time for the vegetables to cook, so if cutting thinner, add the vegetables after 1 hour instead of 2.
- This makes 6 fairly hearty portions. Feel free to cut the recipe in half.

Slow Cooker Pepper Steak
Ingredients
- 2 tablespoons extra-virgin olive oil
- 3 pounds beef sirloin
- 4 tablespoons cornstarch divided
- 3/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup rice vinegar
- 3 cloves garlic minced
- 2 tablespoons grated ginger
- Salt and pepper
- 1 large onion sliced
- 4 large bell peppers or 6 smaller sliced
- 1/2 cup beef broth
- Rice for serving
- Cilantro for serving
- Sesame seeds for serving
Instructions
- Heat 1 tablespoon of the oil in a skillet over high heat. Add the half of the steaks and cook until browned on both sides. Remove to a cutting board. Repeat with the remaining oil and remaining steak.
- Once all of he steak has been browned, cut it against the grain into 1/2 to 3/4 inch slices. Place in the bottom of a slow cooker.
- Sprinkle 3 tablespoons of the cornstarch over the top of the beef, then toss with tongs to coat.
- In a bowl or liquid measuring cup, combine the soy sauce, brown sugar, rice vinegar, garlic, and ginger. Pour over the steak. Add salt and pepper to taste.
- Cover and cook for 2 hours.
- After the 2 hours, add the onion and bell peppers. Stir to combine. Return the lid to the slow cooker and cook for an additional 1 1/2 hours.
- Combine the beef broth with the remaining 1 tablespoon of cornstarch. Add to the slow cooker and cook an additional 30 minutes.
- Serve the pepper steak over rice and top with fresh cilantro and sesame seeds, if desired.

I made this today since I'm not supposed to be moving around much (recovering from surgery) and figured the slow cooker would get a work out for a week or two. This was great! I have always loved pepper steak and the fussy 14 year old in my house ate two helpings and wanted leftovers for lunch. The lime juice and bean sprouts really made the dish. Thanks for posting it.
