As I was making dinner last night, I just kept thinking to myself just how much I enjoy cooking. I’m pretty lucky that I get to cook for a living, doing what I love to do every day. And the majority of the time, that time in the kitchen is my favorite part of the day.
But there are definitely days when I just don’t want to cook. Days when the kids are crazy (oh wait – that’s every day!) or days when we have been out all day and are exhausted. And honestly – sometimes I just want to take a day off.
For those days, I like to have a few favorite recipes that come together in a snap and that take only a few ingredients. Recipes that I know my family will eat. Last week, I shared our favorite mac and cheese, and today, I’m back with another family favorite that I decided to add a little something special to.
Skillet Pasta with Sausage. My family actually loves this dish. And I love it because not only do they eat it, but it’s made in one pan, which means less clean up for me. Winner!!
How to make Skillet Pasta with Sausage
This dinner idea is so super simple. I use smoked sausage to make it fast, since it’s already fully cooked. And yeah, I love the way it tastes! All you do it brown it up, add in the veggies, some liquid and the pasta, and then cook it all together. My family loves penne pasta, bur I really think any short cut pasta would work well. You’ll need to cover the pan that it cooks in, so if your pan doesn’t have a lid, you can just use a baking sheet as a lid.
Once all the liquid is absorbed, it forms just enough of a sauce to cling to the noodles and add lots of flavor. The Green Giant vegetables add a whole new layer of flavors. And I don’t know who loved this skillet pasta more – my kids or my husband. There wasn’t a noodle left when dinner time was over!

Skillet Pasta with Sausage
Ingredients
- 1 tablespoon extra virgin olive oil
- 14-16 oz fully cooked smoked sausage cut into 1/2-inch slices
- 1/2 cup diced onion
- 12 oz package Green Giant Garden Vegetable Medley
- 2 1/2 cups chicken broth
- 1/2 cup milk
- 8 oz dry penne pasta
- Salt and pepper
- 1/2 cup freshly grated Parmesan cheese
- Chopped parsley for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sausage and onion and cook until the sausage is browned and the onion is soft, about 3-5 minutes. Add in the frozen vegetables, chicken broth and milk. Stir in the penne pasta.
- Cover and cook until the pasta is al dente, about 15 minutes.* Stir and season to taste with salt and pepper. Sprinkle the cheese over the top and stir in to melt and combine. Garnish with fresh parsley to serve.

I’m having the same problem with the amount of liquid. The pasta cooked up beautifully but the liquid is almost all there. At this point, by the time the liquid cooks down the veggies and pasta will be way overcooked. I’m going to try thickening the sauce in some way. Smells great, though!

I’m currently making this for dinner. I figured the ingredients would soak up the liquid but its been cooking for like 20 mins and its still pretty liquidy. Is it supposed to be like that?
Deborah says
The pasta absorbs most of the liquid. It will have a bit of a “sauce”, but most should be absorbed. Hope it worked out for you!

Just made this on 1/3/15 but doubled the recipe. AMAZING! This is getting added to our monthly rotation. Thank you!

I’m so glad it was a hit!
Ann says
This may be a stupid question, but should you let the liquid boil before adding the pasta?
Deborah says
Ann – I don’t, I just throw it all in there!

my husband and I LOVE this dish and have made it several times since finding the recipe. my only complaint is that the veggies always seem to come out kind of mushy though…your photos make them look like you somehow avoided that….any tips for keeping them a bit more crisp? maybe just add them into the process later on? Thanks!
Deborah says
Hi Linsday – I would try adding the vegetables 5-7 minutes later to see if you avoid mushy vegetables that way. They should still have plenty of time to cook if you add them a few minutes later. Glad you love the recipe!

I’m so glad you loved it – we eat it often!!

If I want to make a pound of penne noodles instead of 8 Oz what would I change?
Deborah says
You would need to double everything. But you’d probably need to do it in 2 skillets, as with just the 8 oz, it fills a large skillet pretty full. I don’t think you’d be able to double everything in a skillet, but you might be able to use a bigger pot.

I made this tonight and it was really wonderful! I used turkey sausage and the pasta I had on hand. This recipe is definitely a keeper. Thanks for sharing!
