As I was making dinner last night, I just kept thinking to myself just how much I enjoy cooking. I’m pretty lucky that I get to cook for a living, doing what I love to do every day. And the majority of the time, that time in the kitchen is my favorite part of the day.
But there are definitely days when I just don’t want to cook. Days when the kids are crazy (oh wait – that’s every day!) or days when we have been out all day and are exhausted. And honestly – sometimes I just want to take a day off.
For those days, I like to have a few favorite recipes that come together in a snap and that take only a few ingredients. Recipes that I know my family will eat. Last week, I shared our favorite mac and cheese, and today, I’m back with another family favorite that I decided to add a little something special to.
Skillet Pasta with Sausage. My family actually loves this dish. And I love it because not only do they eat it, but it’s made in one pan, which means less clean up for me. Winner!!
How to make Skillet Pasta with Sausage
This dinner idea is so super simple. I use smoked sausage to make it fast, since it’s already fully cooked. And yeah, I love the way it tastes! All you do it brown it up, add in the veggies, some liquid and the pasta, and then cook it all together. My family loves penne pasta, bur I really think any short cut pasta would work well. You’ll need to cover the pan that it cooks in, so if your pan doesn’t have a lid, you can just use a baking sheet as a lid.
Once all the liquid is absorbed, it forms just enough of a sauce to cling to the noodles and add lots of flavor. The Green Giant vegetables add a whole new layer of flavors. And I don’t know who loved this skillet pasta more – my kids or my husband. There wasn’t a noodle left when dinner time was over!

Skillet Pasta with Sausage
Ingredients
- 1 tablespoon extra virgin olive oil
- 14-16 oz fully cooked smoked sausage cut into 1/2-inch slices
- 1/2 cup diced onion
- 12 oz package Green Giant Garden Vegetable Medley
- 2 1/2 cups chicken broth
- 1/2 cup milk
- 8 oz dry penne pasta
- Salt and pepper
- 1/2 cup freshly grated Parmesan cheese
- Chopped parsley for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sausage and onion and cook until the sausage is browned and the onion is soft, about 3-5 minutes. Add in the frozen vegetables, chicken broth and milk. Stir in the penne pasta.
- Cover and cook until the pasta is al dente, about 15 minutes.* Stir and season to taste with salt and pepper. Sprinkle the cheese over the top and stir in to melt and combine. Garnish with fresh parsley to serve.

The FWB fire department loves your recipe! Of course we had to quadruple the batch which meant 3 skillets sauteing onions and sausage then we combine everything in a large pot to finish it off. A little different technique but to feed this many guys we had to change it up.

Question. When you cover the skillet to cook the pasta, should the heat still be on medium high?

You’ll want to keep it at a boil to cook the pasta, so you’ll keep the heat up. I like to lift the lid a few times and stir the pasta and adjust the heat as needed.

If I am using fresh veggies instead of frozen, when would you recommend I add them in? (mushrooms and asparagus)

For whatever reason I seem to always have broth and sausage on hand, I made this, this evening, for I was looking for a creamy pasta, and this was perfect cause I had the cheese that I need to use up, didn’t have green giants frozen veggies but I had some that also needed to be used up, just about to pop some biscuits in the oven to top it off, I am totally loving the one skillet method. I thought at first I was going to have the same problem others were talking about, too much broth, I just took lid off stirred a couple of times then lowered the heat, it turned out creamy good, This is now pinned to my board… Thanks.

I was hesitant to make this because I am not a sausage fan. But my husband is. This was fantastic! Easy to make and it made a lot, which is good with an infant. I used elbow macaroni because I forgot to get the penne and it was still great. Definitely a keeper!

What do you recommend if i dont have chicken broth or i don’t want to use it?

Any broth would work. Technically, you could probably use water, but you’d miss out on a lot of flavor.

I do not usually post to these but I had to let you know this was a very good recipe, I used what I had on hand and it came out soooooo delicious!! And it was all in the same pan so no extra dirty pans 🙂 I tired this recipe with some tweaks, I used bowtie pasta and vegetable broth. The veggies I used were a can of French cut green beans, left over corn and a can of black beans (rinsed).
I cooked the onions and sausage then added the broth and pasta and cooked this till there were 5 minutes left then I added the vegetables and beans b/c they were canned. I let this finish cooking and both my husband, daughter and I thought this tasted amazing. Thank you for this post I will definitely make this again, I like that it is tweak-able!!

I made this last night, but I used Chicken breast instead of sausage. I also used whole grain pasta.
I cooked the chicken first and set aside, and then I followed the instructions. The only thing next time, I would use a 1/2 cup less of broth and still use the 1/2 cup of milk. It was just too much broth and I had to take out a 1/2 cup of the liquid.
It was really delicious and my husband told me I could make this for him anytime…as much as I wanted to!
