As I was making dinner last night, I just kept thinking to myself just how much I enjoy cooking. I’m pretty lucky that I get to cook for a living, doing what I love to do every day. And the majority of the time, that time in the kitchen is my favorite part of the day.
But there are definitely days when I just don’t want to cook. Days when the kids are crazy (oh wait – that’s every day!) or days when we have been out all day and are exhausted. And honestly – sometimes I just want to take a day off.
For those days, I like to have a few favorite recipes that come together in a snap and that take only a few ingredients. Recipes that I know my family will eat. Last week, I shared our favorite mac and cheese, and today, I’m back with another family favorite that I decided to add a little something special to.
Skillet Pasta with Sausage. My family actually loves this dish. And I love it because not only do they eat it, but it’s made in one pan, which means less clean up for me. Winner!!
How to make Skillet Pasta with Sausage
This dinner idea is so super simple. I use smoked sausage to make it fast, since it’s already fully cooked. And yeah, I love the way it tastes! All you do it brown it up, add in the veggies, some liquid and the pasta, and then cook it all together. My family loves penne pasta, bur I really think any short cut pasta would work well. You’ll need to cover the pan that it cooks in, so if your pan doesn’t have a lid, you can just use a baking sheet as a lid.
Once all the liquid is absorbed, it forms just enough of a sauce to cling to the noodles and add lots of flavor. The Green Giant vegetables add a whole new layer of flavors. And I don’t know who loved this skillet pasta more – my kids or my husband. There wasn’t a noodle left when dinner time was over!

Skillet Pasta with Sausage
Ingredients
- 1 tablespoon extra virgin olive oil
- 14-16 oz fully cooked smoked sausage cut into 1/2-inch slices
- 1/2 cup diced onion
- 12 oz package Green Giant Garden Vegetable Medley
- 2 1/2 cups chicken broth
- 1/2 cup milk
- 8 oz dry penne pasta
- Salt and pepper
- 1/2 cup freshly grated Parmesan cheese
- Chopped parsley for serving
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sausage and onion and cook until the sausage is browned and the onion is soft, about 3-5 minutes. Add in the frozen vegetables, chicken broth and milk. Stir in the penne pasta.
- Cover and cook until the pasta is al dente, about 15 minutes.* Stir and season to taste with salt and pepper. Sprinkle the cheese over the top and stir in to melt and combine. Garnish with fresh parsley to serve.

This is the second time I’ve made this recipe; love the simplicity. You should tell people to turn the heat down from medium-high When they cover the dish to simmer. Both times I’ve made this the pan has overheated and poured broth over the stove- I’m a slow learner!

This was very good! I did not have chicken broth on the shelf so I diluted a can of cream of chicken with 2 cups water. Did the rest as written.

Good recipe, but I did need to tweek You need about 12 to 14 oz of pasta, not 8 oz or you have to much sauce. Don’t follow her suggestion of cooking uncovered to evaporate the sauce or you will end up with mushy pasta. I also added dash o garlic powder and left out the Parmesan because of allergies.

I used a can of peas instead of frozen veggies. Instead of the smoked sausage, I used breakfast sausage since that’s what I had. It was delicious!!

Really yummy and easy to put together at the last minute! I used my gluten free pasta with frozen asparagus because that’s all I had on hand. I also added some minced garlic with the sausage and onion and threw in some monterey jack cheese at the end to make it really cheesy. I was craving some comfort food tonight with a winter storm rolling in and this hit the spot. Will definitely make it again. Thanks!

I made this sausage pasta last night and it was very delicious! I grilled the sausage for 5 mins just to give it the grill taste but I also use this organic Italian chicken I bought also and it worked very well with your recipe. When the noodles were done and I had extra liquid I just took 1/2 the excess out and mixed it with flour. It thickened it up a bit. Don’t avoid because it seems too simple! It really is yummy! Thank you!

We loved it. Used kielbasa. Because it is the end of summer I used fresh broccoli, grape tomatoes and asparagus. Hubby does not eat cheese or garlic so I left out. I gave him the hot pepper and he said definitely a keeper. Thanks for sharing,.

I love this dish. I make it all the time. My husband recently switched his diet to low carb. Last night I used frozen zucchini pasta and it was still delicious. Just needs less liquid.
