So last week. Yeah, sorry about that. If you came to link up and there was no link up, I apologize!! As much as I wanted to get up and post, I just was too sick. But I’m back this week and I hope you are here to link up, too!!
And my recipe for this week – well, it’s one of those recipes that you think to yourself – why didn’t I think of this a long time ago??? Rice, in the slow cooker? Why not!! It sure does save on time when it’s time to get dinner on the table. One less thing for me to think about is a good thing.
This recipe really doesn’t get much easier. Just dump and cook. Perfect for Mexican night – which seems to be happening a lot around here lately!!
Slow Cooker Spanish Rice
Ingredients
- 1 cup long grain rice uncooked
- 1 cup water
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 2 cloves garlic minced or grated
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 14.5 oz can diced tomatoes (undrained)
Instructions
- Spray a 4 quart slow cooker with cooking spray. Mix together all of the ingredients in the slow cooker.
- Cover and cook on low for 2 to 3 hours, or until the rice is tender and the liquid has been absorbed.

This was so disappointing. The recipe ingredients would be great and the taste was fine, but the rice was just mush. It was for our Church’s worship team and I ended up just tossing it. Even hubs wouldn’t eat it because it was just so darn soggy and mushy. I wish it had worked because it was so easy but I’ll take the time to do it stove top next time. BTW, I live at elevation 400 ft, so I don’t think it is an altitude issue.

I haven’t tried it with brown rice. I’m guessing that it would, but you might have to play with cooking time.

I haven’t had anyone complain about it being soggy – I wonder if it might be an altitude thing? I would try just decreasing the liquid next time.

This looks SO delicious – do you think you could make it on the stove to cut down on time? If so, how long would I cook it for and would any measurements need to be changed?

I haven’t tried it on the stove, so I’m not sure about the time. I would probably go by the time that it says on the instructions on the bag of rice.

I am going to make this for a larger group. Can I double everything and have it still work out? Would I need to adjust anything? Cook time perhaps?

I haven’t tried doubling it, so I’m not exactly sure how much time you would have to cook it for. I would guess that it would need a little bit of extra time, but not a lot.

Can you confirm for me that you use one cup of water for one cup of rice in this recipe and it makes 10 servings? I’m making it for a large group, so I will adjust, but it looks like a lot of liquid including the undrained tomatoes. Maybe to cook the veggies?

Yes, the 1 cup of water is correct. Each serving will be about 1/2 cup.

I’ve never done the rice in the slow cooker but I do make my spanish rice in a rice cooker. I couldn’t make it on the stove top but easily whip it up several times a week now in the rice cooker.
