Start your morning off right with this Breakfast Bowl. Filling and full of flavor, this is the perfect breakfast. It’s easy to make and very adaptable.

I’ll make eggs every morning – no problem. But the same scrambled eggs every morning can start to get boring. And if you’re going to have breakfast, you might as well have breakfast. Am I right? Because just eggs? Your morning deserves more than that.
Enter the breakfast bowl. I am loving this idea right now. You mostly see sweet breakfast bowls, but if you are looking for a hearty, filling breakfast, turn to the savory breakfast bowl. All of the goodness of breakfast in one bowl, so all of the components get mixed up and it’s deliciousness in each bite.
If you are looking for a way to step up your morning, this is it!
Ingredients
- Bacon: I used bacon here, but you can easily use sausage, as well. Or keep it meatless and skip the bacon or sausage.
- Eggs: I used regular large eggs. We love eggs, and this gives you enough for 2 eggs per person. You can do more or less, depending on how many eggs you eat.
- Milk: You will add a little bit of milk to the eggs to make them fluffy and creamy. For even more indulgence, you can swap in cream.
- Salt and Pepper: Always salt and pepper to taste. I like a lot of salt, so I tend to add more than most people.
- Breakfast Potatoes: I have a whole post for my breakfast potatoes. You can click over to that, or the basic instructions are included at the bottom of the recipe card below. You can even take a shortcut and use frozen hash browns. (But I highly suggest making the recipe included!)
- Cheese: I used cheddar, but this can easily be swapped for another cheese.
- Toppings: You can get creative here. I like avocado, pico de Gallo, cilantro, jalapeños, and green onions. And I’ll usually add on a sprinkling of salt and pepper, as well.
How to Make a Breakfast Bowl
STEP 1: Chop your bacon, then add it to a skillet and cook until it is crisp. Remove it to a paper towel lined plate. Then I like to discard all of the grease but about a tablespoon to cook my eggs in.
STEP 2: Crack the eggs into a bowl, then whisk them with the milk and some salt and pepper. Once your bacon is done, add the eggs to the pan and cook, stirring them gently with a spatula. Cook them to your desired doneness.
STEP 3: Now it’s time to assemble! Start with some of the potatoes in the bottom of your bowl. I like to use a shallow bowl for this.
STEP 4: Top each bowl with some of the eggs.
STEP 5: Then continue to add toppings – taking some of the cooked bacon and the cheese and adding it to the top.
STEP 6: Finish off with any other desired toppings. You can get as creative as you want, or you can go as basic as you want.
Tips and Tricks
- If you are using sausage instead of bacon, you can use the sausage grease to cook the eggs in instead of the bacon.
- If you are going meatless, or if you bake your bacon instead of in the skillet, you’ll want to use about a tablespoon of butter to cook your eggs in.
- The total time on the recipe card does not include the time to make the potatoes, so keep that in mind. You can make the potatoes ahead of time, though, and reheat when needed.
- We like to serve these buffet style, and let each person assemble whatever they like in their bowl.
- If you have any leftovers, store each component separately in the refrigerator.

Breakfast Bowl
Ingredients
- 1/2 lb bacon
- 12 large eggs
- 1 tablespoon milk
- Salt and pepper
- 5 cups breakfast potatoes*
- 4 oz shredded cheddar cheese
- Optional toppings: sliced green onions, sliced jalapeños, minced cilantro, sliced avocado, pico de Gallo
Instructions
- Dice the bacon. Add it to a non-stick skillet over medium heat. Cook until crisp. Remove the bacon to a paper towel lined plate. Discard all but about 1 tablespoon of the bacon grease.
- While the bacon is cooking, crack the eggs into a bowl. Add the milk and season with salt and pepper. Whisk the eggs until fully broken up.
- To the remaining tablespoon of bacon grease, add the whisked eggs. Cook, stirring gently with a spatula. Continue to cook until done, but not fully dry.
- To serve, arrange 1/6 of the potatoes in the bottom of 6 bowls. Divide the eggs between the bowls, then top with cheese. Add desired toppings and serve warm.
