I feel like I just posted this summer salad for the first time yesterday – I couldn’t believe it when I went to make this again and realized that it was 4 years ago when I first posted it!!
My kids have been talking of nothing but summer lately, so even though it’s not summer yet, I think this salad will get you in the mood for the warmer months. This is one of my all-time favorite salads. If nothing else, you at least need to make this dressing. It’s to die for! If you are a fan of sweet and savory salads, this one is definitely for you.
This salad – oh, this salad. I needed to bring a salad to a family get-together, and I flipped open my handy family cookbook. I couldn’t get past this salad, even though the title says “summer” and it was still winter when I made this.
I don’t know who Steph is, but I am so grateful to her for this salad recipe because it is amazing!! I am one that loves fruit in my salad anyway, but the combination of the fruits and veggies in this salad, combined with the amazing dressing – this salad is pretty much perfection!

Steph’s Summer Salad
Ingredients
Dressing
- 1/2 cup vegetable oil (or other neutral oil)
- 4 tablespoons tarragon vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon sugar
- 3-4 tablespoons honey
Salad
- 1 (5 oz) bag Spring Mix lettuce
- 1 gala apple thinly sliced
- 1/2 small red onion thinly sliced
- 2 kiwis halved and sliced
- 1 (11 oz) can mandarin oranges drained and roughly chopped
- 3 oz Craisins
- 1/4 cup slivered almonds toasted
Instructions
- To make the dressing, combine all of the ingredients in a blender and blend until combined and creamy.1/2 cup vegetable oil, 4 tablespoons tarragon vinegar, 2 tablespoons Dijon mustard, 1 tablespoon sugar, 3-4 tablespoons honey
- Combine all of the salad ingredients in a large salad bowl and toss to combine.1 (5 oz) bag Spring Mix lettuce, 1 gala apple, 1/2 small red onion, 2 kiwis, 1 (11 oz) can mandarin oranges, 1/4 cup slivered almonds, 3 oz Craisins
- Pour the dressing over the salad just before serving*.
