Strawberry Avocado Chicken Club Sandwich
We have just about made it – school is starting in less than a week for my kids. This summer has been so much fun, and it’s going to be hard to get back into the swing of things and a regular schedule! But I also love a normal schedule, so I’m sure we’ll be thriving in no time.
As we head back to school, of course we have to talk about lunches. My kids don’t love school lunch, so 90% of the time they like to take home lunch. The thing I don’t like, though, is when the lunchbox comes home and half of the lunch is still there. That usually includes a sandwich with one bite taken out of it.
So this year, let’s make it the year of no boring sandwiches. I know, I know – there is absolutely nothing wrong with a good pb&j every once in a while, but sprucing up your sandwich game can make lunchtime interesting and delicious!!
First of all, let’s talk bread, because without a good base to your sandwich, you’ve got nothing. I use Sara Lee® Butter Bread, because not only does it taste rich and buttery (my favorite part!), but I can feel good about serving it. It has no high fructose corn syrup, no artificial colors or flavors, 0 grams of trans fat, and it is low fat and cholesterol free. And did I mention that it is rich and buttery? 🙂
Now let’s talk about the elephant in the room – strawberries on your sandwich? I promise I’m not crazy – but avocados and strawberries are a match made in heaven. Years ago I had a guacamole at a Mexican restaurant that had strawberries in it, and I’ve been obsessed with the combination ever since. And let me tell you – nothing takes the boring out of a sandwich like adding strawberries does!
What is on a chicken club sandwich?
A traditional chicken club sandwich will have cooked chicken, bacon, lettuce, tomato and mayonnaise on bread. We are changing things up a bit today, and replacing the mayonnaise with avocado and the lettuce and tomato with strawberries. The bread on a chicken club sandwich can also be toasted, if you’d like, but I usually go with untoasted. The Sara Lee Butter Bread holds up well on this sandwich, but if you like the toasty factor, it toasts equally well!
How to make a Strawberry Avocado Chicken Club Sandwich
1. Cook your bacon until crisp.
2. Mash the avocado with a little bit of lemon juice, then season it with salt and pepper.
3. Spread some of the avocado spread on a slice of Sara Lee Butter Bread. Top with strawberries, chicken and bacon, then place a second slice of bacon on top.
4. Repeat with the remaining ingredients.
5. Enjoy!

Strawberry Avocado Chicken Club Sandwich
Ingredients
- 8 oz thick cut bacon
- 1 avocado
- Juice of half a lemon
- Salt and pepper
- 8 slices Sara Lee® Butter Bread
- 1 cup cooked shredded chicken
- 8 medium strawberries hulled and sliced
Instructions
- In a large skillet, cook the bacon over medium heat until crisp. Drain on paper towels, then cut in half.
- In a bowl, mash the avocado roughly. Stir in the lemon juice, then season to taste with salt and pepper.
- To assemble the sandwiches, place 4 slices of bread on a work surface. Spread 1/4 of the avocado mixture on each of the slices of bread. Top with 1/4 of strawberries on each piece, followed by 1/4 cup of chicken and 3 half slices of bacon. Place the remaining 4 slices of bread on top of each sandwich.
- Cut in half before serving, if desired.
