We’ve all had those nights. It’s been a crazy day, and you just don’t want to make dinner.
It is nights like those that I pull out this recipe for Teriyaki Chicken Bowls.
And really, it’s so easy that it’s not even really a recipe.
In fact, I’ve been making this since college, before I really even knew how to cook.
So not only is it fast, but it is very beginner friendly. It’s a dinner recipe that everyone can enjoy!
Ingredients
- Chicken: I will usually use boneless, skinless chicken breasts. But chicken thighs have even more flavor!
- Oil: I like to use extra virgin olive oil, but any neutral oil would work, as well.
- Teriyaki Sauce: I use my Homemade Teriyaki Sauce. It is perfect in this recipe. It’s nice and thick and works well. If you want to use store bought, I would look for teriyaki glaze instead of the sauce because store bought teriyaki sauce tends to be very thin.
- Rice: If you are starting with dry rice, you’ll want to get this started before you start your chicken since it will take the longest to make. I have a rice cooker, so it’s pretty simple. You could also use minute rice or rice that comes already prepared to make it even faster.
- Broccoli: I like to simply steam fresh broccoli. You could also use frozen broccoli.
- Sesame Seeds: You’ll get the most flavor if you use toasted sesame seeds. You can buy them toasted, but it’s really easy to toast them yourself. I just use a dry skillet over medium heat. Just keep an eye on them so they don’t burn!
How to Make Teriyaki Chicken Bowls
- Season the chicken with salt and pepper. Heat the oil in a skillet and add the chicken.
- Cook until browned and cooked through.
- Add the teriyaki sauce and cook for a few minutes to coat the chicken.
- Serve over rice with the broccoli.
Change it Up!
This recipe is super basic, so it is easy to change it up!
- Instead of rice, serve over noodles or cauliflower rice.
- Add in some stir fried vegetables, like peppers or mushrooms.
- Drizzle with toasted sesame oil before serving for extra flavor.
- Add some heat with a pinch of red pepper.
- Use steak instead of chicken.
Make Ahead and Storing
If you are using homemade teriyaki sauce, it is easy to make ahead and store in the refrigerator. It only takes about 15 minutes to make, but can be stored in the refrigerator for a few weeks.
The chicken can be made ahead of time, as well. Just reheat in the skillet and add the teriyaki sauce.
The broccoli and rice can be made ahead of time, as well, and stored in the refrigerator. Just use caution when reheating the broccoli so that you don’t overcook it.
Store any leftovers in a container in the refrigerator for up to 4 days. I like to reheat it in the microwave. If reheating on the stove, you might need to add a bit of chicken broth.
