We are officially on summer break. How in the world did that happen? I seriously feel like school just started, and then here we are, school year behind us.
I can’t decide if I’m excited or if I’m scared. 😂 I love not having a schedule, and especially not having to race through the mornings, just to get to school on time. But I also have a hard time not sticking to a schedule.
This summer is going to be a little different than summers past – and I think I have my kids getting older to blame for it. We’ll still have lots of fun (we’re hitting the road today for a pretty epic road trip!), but my kids also want to get involved with some things this summer. My youngest will be starting t-ball, and my oldest doesn’t want to wait until the fall to start dance. So I’m pretty sure our summer isn’t going to be full of lazy mornings and picnic lunches every day.
Since Camden will be doing t-ball, we will have some very busy nights. 2 games a week. Yikes. And I thought school nights were busy… Well, since we will have busy nights, and let’s face it – no one wants to be cooking dinner in the summertime anyway – I’m arming myself (and all of you!) with another super simple weeknight meal.
One of my go-to ideas for busy nights are wraps. I’ve made some great ones (like these Chicken Caesar Wraps, or this California Club Chicken Wrap).
But I’m so excited about the flavor combination for this wrap. Because I’ve said it before – I’m on a mission to Tex-Mex-ify everything.
These Tex-Mex Chicken Salad Wraps are so packed with flavor. I’m always a fan of using shredded chicken. You can cook it up at the beginning of the week for easy recipes all week long. Combine that with a little bit of mayo, some plain yogurt, and some Old El Paso taco seasoning for the perfect amount of taco flavoring. Add in some bell pepper, jalapeno and cilantro, and you have a bit of spice and a whole lot of flavor.
These Tex-Mex Chicken Salad Wraps would totally make for an easy lunch, as well. Any time of day you serve them, they are sure to be a hit!

Tex-Mex Chicken Salad Wraps
Ingredients
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 2 teaspoons Old El Paso taco seasoning
- 2 1/2 cups cooked shredded or chopped chicken
- 1/2 cup diced red bell peppers
- 1 jalapeño seeds removed, finely chopped
- 1/4 cup chopped cilantro
- 8 Old El Paso Burrito Size flour tortillas
- 1 large avocado sliced
- 1/2 cup shredded Mexican blend cheese
Instructions
- In a bowl, combine the mayonnaise, yogurt and taco seasoning and stir to mix completely. Add the chicken, bell pepper, jalapeño and cilantro and stir to combine.
- Heat the tortillas in the microwave for about 30 seconds to soften. To assemble, place a couple slices of avocado down the center of each tortilla. Top with about 1 tablespoon of the cheese, and some of the chicken salad. Tuck the ends over, then roll into a wrap.
- Cut wrap in half to serve.

Love this combination of ingredients, and the simplicity. They sound so good! We don’t have kids yet so our summers are pretty slow, but I’ll take easy weeknight meal ideas anytime anyway. 🙂
