Can you believe it is already the week of Thanksgiving??
Thanksgiving is easily one of my favorite holidays. The food, the family… you just can’t beat it. And I look forward to it with anticipation every year.
I look forward to that turkey dinner, the sweet potatoes, the rolls, the stuffing, the green beans… all of it. But do you know what else I look forward to? The leftovers.
When we eat with my family, we usually have Thanksgiving lunch instead of dinner. And then we all lounge around all day, resting and talking and playing games. And when dinner times rolls around, we usually make sandwiches with the leftover turkey and rolls.
But the next day is what I get really excited about. Every year, I have to have my turkey sandwich. It’s nothing crazy – it’s quite simple, actually. Just mayonnaise, turkey, and lots of salt and pepper on really soft white bread. I look forward to that sandwich every year.
But let’s face it. There is so much more to Thanksgiving leftovers than that turkey sandwich. In fact, we usually have so much turkey leftover that we could be eating it for days. That’s when you have to start getting creative.
These Thanksgiving Leftover Enchiladas take leftover turkey and leftover stuffing (or dressing, whatever you call it!) and turn them into a Mexican inspired feast.
When I went to make these, I knew I wanted to keep them simple. Because no one wants to spend an hour on dinner the day after Thanksgiving. So all you need are some leftovers, cheese, tortillas, and Old El Paso Red Enchilada Sauce (which I always have in my pantry). And I’ve said it before, but I always stock up on the Old El Paso flour tortillas because they are my very favorite.
All I did was combine the turkey, stuffing and some cheese and roll them in flour tortillas. Top that with the enchilada sauce, and bam – day after Thanksgiving dinner is done! Super simple, and super delicious. These Thanksgiving Leftover Enchiladas are such a great way to enjoy those leftovers after you get bored of those turkey sandwiches!

Thanksgiving Leftover Enchiladas
Ingredients
- 2 cups shredded turkey
- 1 1/2 cups leftover stuffing or dressing
- 1 1/2 cups shredded cheddar cheese
- 2 10 oz cans Old El Paso Red Enchilada Sauce
- 1 8 count package Old El Paso Flour Tortillas for Burritos
- cilantro
Instructions
- Preheat the oven to 350ºF.
- In a large bowl, combine the turkey, stuffing and 1 cup of the cheese. Mix to combine.
- Pour about 1/3 of one of the cans of enchilada sauce in the bottom of a 9x13-inch baking dish. Tilt the dish to coat the bottom completely with the sauce.
- Take one of the tortillas and spread 1/8 of the turkey mixture down the center. Roll the enchilada up and place in the prepared dish, seam side down. Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce over the top of the enchiladas. Top with the remaining cheese. Bake in the preheated oven until the cheese is melted and the sauce is bubbling, about 20 minutes.
- Top with cilantro before serving.
