Lately, this fruit salad has been making it onto the table at dinnertime – I just can’t seem to get enough of it!! Lots and lots of fresh fruit, with a kick of honey, lime, cinnamon and coconut. I’m totally bringing a bit of the tropics to your dining room table!
I usually will use all fresh fruit in this salad. But I have used canned mandarin oranges before and those work well as well. And the beauty of this recipe is that you can really use any fruit that you want or that you have on hand.
Next time you need to add a bit of sunshine to your table, this is the way to do it!
Ingredients
DRESSING: For the dressing, you’ll need honey, lime juice, and cinnamon. You can leave the cinnamon out, if desired, but I think it adds just enough spice to make it interesting. Although not part of the dressing, you’ll also mix some coconut in at the end to really bring home the tropical flavors. I used sweetened, shredded coconut, but unsweetened would be great, too!
FRUIT: I use a mixture of pineapple, strawberries, mandarin oranges, kiwifruit, and banana. You can definitely change this up and use what you have on hand or what you like. I like to use all fresh fruit when possible. But I have also used canned oranges, and canned pineapple would work in a pinch.
If you are using your own mix of fruit, you’ll want about 4 1/2 cups of chopped fruit.

Okay, I love this! My kids love it when I serve a fruit salad on the side with dinner, but it’s always the same thing. Love the coconut…I should of thought of that!
