These Vegetarian Wraps with Beans and Cheese make the perfect grab and go lunch. Filled with cream cheese, refried beans, cheese, salsa, green onions, cilantro and avocado, they will make your taste buds happy!
I know I’m not the only one that gets stuck in the lunch rut. I’m the only one in my family who really will eat leftovers, so I’m usually stuck with leftovers. Or if I’m too busy to actually sit down, I’ll end up snacking on the leftovers from my kids’ plates. Really, it’s pretty rare for me to go into the kitchen and make something just for me. Because for some reason, I have this idea in my head that I’m too busy and don’t have time to make myself lunch.
Well, friends, today I’m here to share a super easy, super delicious recipe that is so easy and fast that you will have no excuse to not whip it up for lunch. Or even a quick, on the go dinner!

I actually got the idea for these wraps when I was in Washington a few months ago. Our group was touring a farm, and they fed us lunch while we were there. There was a selection of sandwiches and wraps. I’ll be the first to admit that I don’t usually choose the vegetarian option if there is one, but they had some vegetarian wraps that looked pretty delicious. So I picked one up.
Crazy as it sounds because the wrap was so simple, it was one of my favorite things that I ate. So good, in fact, that I took a picture of the label so I would remember what was in it to make it when I got home!!
This wrap is a little bit different from the one I had at that farm that day, but it is still so good. Like – I could eat this 4 times a week and not get sick of it – good. And it’s so easy that you should be able to have it on your plate in well under 15 minutes.
Basically, all you do is layer some soft cream cheese, refried beans, cheese, salsa, green onions, cilantro and avocado on a tortilla, then roll it all up for easier eating. It can get a little messy – depending on what kind of salsa you use. But if you are like me, you’ll still eat every last bite and then lick your fingers clean.
I used some of my favorite Old El Paso products – the tortillas and the refried beans. You do need to note, though, that if you are making these truly vegetarian, you need to use the Old El Paso Vegetarian refried beans, not the traditional refried beans that are shown in the picture. I used what I had on hand. 🙂
I have no more excuses to get in the kitchen and make myself a good lunch. 13 minutes is all I need to make one of these vegetarian wraps!

Vegetarian Wraps with Beans and Cheese
Ingredients
- 1/2 cup Old El Paso Refried Beans*
- 4 Old El Paso 8-inch Flour Tortillas
- 6 tablespoons whipped cream cheese
- 1/2 cup shredded cheddar cheese
- 6 tablespoons fresh salsa
- 4 tablespoons chopped green onions
- 4 tablespoons chopped cilantro
- 1/2 avocado cut into slices
Instructions
- Place the refried beans in a small saucepan. Add a splash of water and heat over medium-low just until warmed through.
- Lay a tortilla on a work surface. Spread 1 1/2 tablespoons of cream cheese evenly over the tortilla. Top that with 2 tablespoons of the refried beans, then 2 tablespoons of the shredded cheddar, 1 1/2 tablespoons of the salsa, 1 tablespoon of green onions and 1 tablespoon of cilantro. Place a couple slices of the avocado down the center of the tortilla. Starting on one side, roll the ingredients up in the tortilla, forming a wrap.
- Repeat 3 more times with the remaining ingredients, making 4 wraps.
