Originally posted October 15, 2008 – I have about a bazillion chili recipes already, but you can never have too many chili recipes, right? This Beef and Bean Chili recipe comes from way back in the archives, and is a delicious dinner idea for those cold nights. We seem to be turning to a chili recipe or a soup at least once or twice a week lately. This chili recipe gets a depth of flavor because it starts with a little bit of bacon, and that bacon really makes it stand out amongst many other chili recipes. I know I’ll be getting lots of use out of this recipe through the upcoming cold months!

Did you know that October is National Chili Month? And what better way is there to welcome in the cooler weather than with ah steaming bowl of chili and a side of cornbread? This chili should have you ready to face the cooler temperatures!
We had snow last weekend in Utah. Yes – snow already. At 1pm on Sunday, I had to scrape about an inch and a half of it off of my car. I guess there’s a reason why they say that Utah has The Greatest Snow on Earth. Too bad I’m not a skier! But with the snow and the cooler weather, it just gives me more of an excuse to make up comforting bowls of chili and cornbread!!

Warm You Up Beef and Bean Chili
Ingredients
- 4 slices bacon chopped
- 1 large onion diced
- 2 cloves garlic minced
- 1 jalapeño seeds and membranes removed, minced
- 1 1/2 lbs ground beef
- 12 oz beef broth
- 1 1/2 tablespoons chili powder
- 1 tablespoon hot sauce such as Frank’s red hot
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 14.5 oz can diced tomatoes, undrained
- 1 8 oz can tomato sauce
- 1 15 oz can kidney beans, drained and rinsed
- desired toppings - sour cream shredded cheddar cheese, jalapeños, etc.
Instructions
- Cook the bacon in a large pot or Dutch oven over medium heat until crispy. Remove to a paper towel lined plate. Discard all but about 1 tablespoon of bacon grease.
- Add the onion and cook until translucent. Add the garlic and the jalapeño and continue to cook for 1 minute. Add the ground beef and cook until browned and cooked through, breaking it up as it cooks.
- Once the beef is cooked, add the beef broth. Cook until the liquid is reduced by about two-thirds. Stir in the chili powder, hot sauce, Worcestershire sauce, salt and pepper. Add the diced tomato and tomato sauce and bring to a bubble. Reduce the heat and continue to simmer until the chili thickens, about 30 minutes. Stir in the kidney beans and the reserved bacon and cook until the beans are warmed through, about 10 minutes.
- Serve topped with your favorite chili toppings.

mmm, I love chili! I have yet to find the absolute best chili ever – it’s one of those things, you know? Sadly, I don’t even know if I know what I want from it. I will have to give this recipe a try, it looks awfully tasty an simple.
Snow in October; normally I would have scoffed as such an idea. However, last weekend we had our first snowfall as well[North Dakota aka South Canada]. I have ordered a super coat for this winter in preparation.
