Ingredients
2lbsrusset potatoes(about 2-3 potatoes)
3tablespoonsextra virgin olive oildivided
1teaspoonkosher salt
1/2teaspoonsmoked paprika
1/2teaspoongarlic powder
fresh chopped parsley
Instructions
Scrub the potatoes clean, then cut into matchsticks about 1/4” each. Make sure to keep them as even as possible so that they will cook evenly.
Fill a large bowl with water and add the potato sticks. Let them soak for 10-15 minutes.
Preheat the oven to 450ºF. Brush a large baking sheet with about 1/2 tablespoon of the olive oil.
Drain the water and dry the potatoes as well as possible with a clean kitchen towel or paper towels. Place the potatoes in a clean bowl. (You can dry out the bowl that you used to soak them in for less dishes!) Drizzle the remaining olive oil over the potatoes. Sprinkle in the salt, paprika, and garlic powder. Toss to coat.
Transfer the potatoes to the prepared baking sheet, spreading the fries out into a single layer.
Bake in the preheated oven for 20 minutes. Remove the sheet from the oven and carefully flip the fries over. Return to the oven and continue to bake until the fries are golden brown and crispy, about 10-20 more minutes. (The bake time will be more or less depending on the size that they were cut.)
Remove from the oven and toss in the chopped parsley. Serve hot.
