Ingredients
16.5ozroll refrigerated sugar cookie dough
16ozcream cheesesoftened
1/2cupsugar
1teaspoonvanilla
2eggs
1cupmashed ripe bananas(about 2 medium bananas)
Whipped creamfor serving (optional)
Instructions
Heat the oven to 350ºF. Spray a 9x13-inch baking dish with nonstick cooking spray.
Break the cookie dough into pieces and press it into the bottom of the baking dish. Bake for 10 to 15 minutes, or until the dough is lightly set. Cool for 15 minutes.
In a large bowl, beat the cream cheese and sugar until it is smooth. Beat in the vanilla, then the eggs, one at a time, scraping down the sides of the bowl as needed. Beat in the mashed bananas.
Pour the cream cheese mixture over the cooled crust. Bake for 30 minutes, to until the outside edges of the cheesecake are set. Cool for 15 minutes, then refrigerate until completely cool before cutting.
If desired, serve with whipped cream.
