Ingredients
1pintblueberriesabout 2 1/2 cups
1/2cupplus 1 teaspoon flour
3tablespoonsplus 1 teaspoon sugar
1teaspoonlemon juice
1/2teaspoonlemon zest
1teaspoonbaking powder
1/8teaspoonsalt
2 1/2tablespoonscold unsalted buttercut into small cubes
1/4cupmilk
Instructions
Preheat the oven to 375ºF.
Combine the blueberries, the 1 teaspoon of flour, 2 tablespoons of the sugar, the lemon zest and the lemon juice in a bowl. Mix to combine. Pour the mixture into an 8x8 inch baking dish.
In another bowl, mix together the remaining 1/2 cup flour with 1 tablespoon of the sugar, the baking powder, and the salt. Add the butter and cut it into the flour mixture with a fork or a pastry cutter until it resembles coarse meal. Stir in the 1/4 cup milk just until combined.
Drop the dough by teaspoonfuls onto the blueberries. Sprinkle the remaining 1 teaspoon of sugar over the top.
Bake the cobbler for about 30 minutes, or until it is golden brown and the berries are bubbling.
Serve warm with ice cream, if desired.
