Ingredients
1tablespoonextra virgin olive oil
3/4cupdiced carrot
3/4cupdiced celery
1 1/2poundsground chicken
3tablespoonsranch seasoning
1/2teaspoononion powder
1/2teaspoongarlic powder
1/2teaspoonsalt
1/4teaspoonpepper
3cupschicken broth
2(15.5) oz canswhite beansdrained and rinsed
1(14.5 oz) canfire roasted tomatoesundrained
1/2cupbuffalo sauce
8ozcream cheesesoftened and cut into cubes

Instructions
Heat the olive oil in a large soup pot or dutch oven over medium heat. Add the carrots and celery and cook, stirring often, until they start to soften.
1 tablespoon extra virgin olive oil, 3/4 cup diced carrot, 3/4 cup diced celery
Add the ground chicken. Cook, breaking up with a wooden spoon as it cooks. Continue to cook until no longer pink.
1 1/2 pounds ground chicken
Stir in the ranch seasoning, onion powder, garlic powder, salt, and pepper. Cook for 1-2 minutes.
Add in the chicken broth, beans, tomatoes, and buffalo sauce. Continue to cook until it comes to a simmer.
3 cups chicken broth, 2 (15.5) oz cans white beans, 1 (14.5 oz) can fire roasted tomatoes, 1/2 cup buffalo sauce
Once at a simmer, add in the cream cheese. Continue cooking, stirring often, until the cream cheese has melted into the chili.
8 oz cream cheese
Serve warm, topped with cilantro and blue cheese crumbles.

I have made this with both 1 and 2 cans of beans, and love it both ways! 2 cans will give you more fiber.Use less buffalo sauce if you want to make it more mild.If you aren’t a fan of blue cheese, you can also use shredded cheddar cheese to top your chili.Nutrition information provided as an estimate only.
