Light and fluffy and filled with lots of pockets of chocolate, these Chocolate Chip Pancakes are a delicious breakfast treat. These pancakes are perfect for the weekend, but easy enough for any day of the week.

Ingredients
1 3/4cupsall-purpose flour
2tablespoonssugar
1tablespoonbaking powder
1/2teaspoonsalt
1 1/2cupsmilk
3tablespoonsmelted butter,plus more for the griddle
2eggs,separated
2teaspoonsvanilla extract
1/2cupmini chocolate chips
Instructions
Add the flour, sugar, baking powder, and salt to a large bowl. Whisk to combine.
In another bowl, whisk together the milk, butter, and egg yolks. Place the egg whites in a small bowl.
Pour the milk mixture into the dry ingredients and mix to combine. (There will still be small lumps - do not over mix.)
Beat the egg whites with a hand mixer until still peaks form. Add about 1/3 of the egg whites to the batter and stir to combine. Add the remaining egg whites and the chocolate chips and gently fold everything together until no white streaks appear.
Heat a griddle or skillet over medium-high heat. Grease with butter or nonstick cooking spray.
Pour about 1/3 cup of the batter onto a hot griddle. Let the pancakes cook until bubbles form, then flip and continue to cook until browned and cooked through.
Continue with the remaining batter until all of the pancakes are cooked.
