Ingredients
1 1/2cupsall-purpose flour
1/2cupunsweetened cocoa powder
1/2cupsugar
2teaspoonsbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1cupmilk
1/4cupbuttermelted
2large eggsseparated
1teaspoonvanilla extract
1/2cupmini chocolate chips
Instructions
In a large bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Whisk to combine.
In another bowl, whisk together the milk, butter, egg yolks, and vanilla.
Add the milk mixture to the dry mixture and stir just until combined.
Place the egg whites in another bowl. Use an electric mixer to whisk the whites until you have stiff peaks.
Add about 1/4 of the egg whites to the batter and mix to combine. (This will lighten up the mixture.) Add the remaining egg whites and gently fold until they are almost completely combined. Add the chocolate chips and continue to fold until the chocolate chips are evenly dispersed and there are no more white streaks from the egg whites.
Heat a waffle iron and cook the batter according to the manufacturer's directions.
Serve the waffles topped with your choice of toppings.
