Ingredients
2cans16 oz each Great Northern beans, undrained
1can28 oz diced tomatoes, undrained
3/4cupchicken broth
3medium carrotspeeled and sliced
1cupchopped onion
2clovesgarlicminced
1/2teaspoonsalt
1/2teaspoondried thyme
1/4teaspoonpepper
1bay leaf
1package14-16 oz smoked turkey sausage, sliced
1/4cupfreshly grated Parmesan cheese
Instructions
Combine the beans, tomatoes, broth, carrots, onion, garlic, salt, thyme, pepper and bay leaf in a 5-quart slow cooker. Cook on the low setting for 4 hours.
Add the sausage to the slow cooker and cook an additional 2 hours, or until the vegetables are soft.
Remove and discard the bay leaf.
Top each serving with Parmesan cheese.
