Ingredients
3oz.fresh ginger
1/2cupwater
1/2cupsugar
1/4cupfresh lime juice
34ozSeltzer Water
Instructions
Peel the ginger, then cut into coins.
To a small saucepan, add the water, sugar, and ginger coins. Bring to a boil, then reduce the heat and cook until the sugar is dissolved.
Remove the pan fro the heat and add the lime juice. Let the mixture sit for at least 30 minutes to allow the flavors to steep and combine.
Once the mixture has steeped, strain into a jar with a lid or a lidded container. Refrigerate until completely cold.
To serve, add ice to 5 glasses. Add about 1/4 cup of the syrup to each glass, then top with about 7 ounces of seltzer water each. Stir gently. Serve with additional lime slices, if desired.
