Ingredients
1tablespoonextra virgin olive oil
1medium oniondiced
12ozfrozen broccolithawed
1 14ozloaf French breadcut into cubes
1/2lbfully cooked hamchopped
6large eggslightly beaten
1 1/2cupsmilk
2tablespoonschopped chives
1tablespoonDijon mustard
1/2teaspoonsalt
1/4teaspoonblack pepper
1 1/2cupsshredded Cheddar cheese
Instructions
Heat oven to 375°F. Coat a 2 to 3-quart baking dish with nonstick spray.
Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes.
Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham.
In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix. Transfer to prepared dish, and top evenly with cheese.
Bake at 375° for 40 to 45 minutes, or until the center of the strata is set and the cheese is melted and bubbly. Let the strata cool for a few minutes before serving.
