Ingredients
28 oz boneless, skinless chicken breasts
3tablespoonsall-purpose flour
1/2teaspoonsalt
1/8teaspoonpepper
2tablespoonsunsalted butter
1tablespoonextra virgin olive oil
4tablespoonslow-sodium soy sauce
6ozdeli sliced ham
18 oz can pineapple slices, drained
4slices(3 oz) Provolone cheese
Instructions
Butterfly each chicken breast open, then cut to create 4 thinner pieces of chicken.
Combine the flour, salt, and pepper in a shallow dish.
Heat the butter and olive oil in a large skillet over medium heat. Once the butter is melted, dip each piece of chicken in the flour mixture to coat both sides and place in the skillet. Cook the chicken until browned, about 5 minutes, then flip to cook the second side. Cook until the chicken is cooked through, another 3-5 minutes, or until it reaches about 160ºF with an instant read thermometer.
Once the chicken is cooked through, add the soy sauce to the pan and flip the chicken to coat in the sauce. Divide the ham between the chicken, then top each with a pineapple ring and then a slice of cheese. Turn off the heat and place a lid on the skillet. Let it sit until the cheese is melted.
Serve immediately.
