Ingredients
3/4poundbacon
1 3/4cupsall-purpose flour
2tablespoonssugar
1tablespoonbaking powder
1/4teaspoonsalt
2eggsslightly beaten
1 3/4cupmilk
1/2cupvegetable oil
1/4cupreal maple syrup
1teaspoonmaple extract
Instructions
Preheat a waffle iron.
Cut the bacon into small pieces. Cook over medium heat until crisp; remove to a paper towel lined plate.
In a bowl, mix together the flour, sugar, baking powder, and salt. Make a well in the center of the mixture. Pour in the eggs, milk, oil, maple syrup, and maple extract. Mix until just combined. Fold in the bacon.
Oil the waffle maker, then cook the waffle batter according to the manufacturer’s instructions. Serve with additional maple syrup, if desired.
