Ingredients
1cupold fashioned oats
1/2cupmilk
1cupunsweetened applesauce
1large egg
1teaspoonvanilla extract
3tablespoonsbuttermelted
1cupwhole wheat flour
1/2cupbrown sugar
1teaspoonbaking powder
1teaspooncinnamon
1/2teaspoonbaking soda
1/2teaspoonsalt
1teaspoonsugar
Instructions
Combine the oats and the milk in a small bowl. Let it sit for an hour.
Heat the oven to 400ºF.
Prepare a 12-cup muffin pan by spraying with nonstick cooking spray.
In a large bowl, combine the applesauce, egg and vanilla extract. Stir in the oat mixture.
Add the melted butter and stir to combine.
Add the flour, brown sugar, baking powder, cinnamon, baking soda and salt. Stir just until combined.
Divide the mixture evenly between 12 cups, about 2/3 full.
Sprinkle the 1 teaspoon of sugar over the tops of the the muffins.
Bake until the muffins are cooked through and a toothpick inserted in the top comes out clean, about 14 minutes.
