Ingredients
Filling
1cupsugar
2tablespoonsplus 1 1/2 teaspoons cornstarch
1teaspoonground cinnamon
1 1/2cupssour cream
3eggslightly beaten
2cupsraisins
Bars
1 3/4cupsall-purpose flour
1 3/4cupsold fashioned oats
1cuppacked brown sugar
1teaspoonbaking soda
1/2teaspoonsalt
1cupcold buttercut into cubes
Instructions
Make the filling:
In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in the sour cream and cook over medium-high heat until it starts to bubble, stirring often. When it starts to bubble, turn down the heat and cook for 2 more minutes, stirring as it cooks.
1 cup sugar, 2 tablespoons plus 1 1/2 teaspoons cornstarch, 1 teaspoon ground cinnamon, 1 1/2 cups sour cream
Remove from the heat, and while whisking the eggs, add a small amount of the hot mixture to the eggs.

Stir the egg mixture back into the saucepan and return the heat. Bring to a boil, and cook an additional 2 minutes, stirring the whole time. (I like to switch between a whisk and a spatula to make sure I’m keeping lumps out, while also making sure none sticks to the bottom of the saucepan and burns.)
Remove from the heat and stir in the raisins. Let the mixture sit, without stirring, until room temperature.

Make the crumb:
In a large bowl, combine the flour, oats, sugar, baking soda, and salt. Use a pastry cutter to cut in the butter until it resembles coarse crumbs.
1 3/4 cups all-purpose flour, 1 3/4 cups old fashioned oats, 1 cup packed brown sugar, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup cold butter
To assemble:
Preheat the oven to 350ºF. Grease a 9x13-inch baking pan.
Press 3 1/2 cups of the crumb mixture into the bottom of the prepared pan.
Gently spread the raisin mixture over the crust.
Sprinkle the remaining crumb mixture over the top of the raisin filling.
Bake the bars for 25-30 minutes, or until browned and set. Let cool completely before cutting into bars
