Ingredients
For the muffins:
1cupgranulated sugar
1/2cupbutter,softened
2tablespoonssour cream
2large eggs
2cupsall-purpose flour
1teaspoonbaking soda
1/4teaspoonsalt
2/3cupbuttermilk
1tablespoonorange zest
For the syrup:
1/3cupgranulated sugar
1/4cuporange juice
Instructions
Preheat the oven to 400ºF. Grease 12 muffin cups or line with paper liners.
In a large bowl, beat the sugar and the butter together until combined. Beat in the sour cream. Add the eggs, one at a time, beating between each addition.
Add the flour, baking soda, and salt to the sugar mixture and mix until halfway combined. Pour in the buttermilk and stir just until combined, then fold in the orange zest.
Divide the batter between the prepared muffin cups, filling each about 2/3 full. Bake in the preheated oven until a tester inserted in the middle comes out clean, about 12-14 minutes.
When the muffins are almost done baking, combine the sugar and the orange juice in a small pan and place it over medium heat. Cook until the sugar is dissolved.
When the muffins are done, remove from the oven and brush the orange syrup over the tops of the muffins. Allow the muffins to cool for a few minutes before removing from the pan.
