Ingredients
2 1/2cupsall-purpose flour
1tablespoonsugar
1 1/2 to 2teaspoonscracked black pepper
1teaspoonbaking powder
3/4teaspoonsalt
1/2teaspoonbaking soda
2beaten eggs
8ouncesplain low-fat yogurt
1/2cupcooking oil
1/4cupmilk
1tablespoonspicy brown mustard
1cupshredded cheddar cheese(4 ounces)
1/4cupthinly sliced green onions
Instructions
Preheat the oven to 350F. Spray a 9x5-inch loaf pan with nonstick cooking spray.
In a large bowl, combine the flour, sugar, pepper, baking powder, salt and baking soda.
2 1/2 cups all-purpose flour, 1 tablespoon sugar, 1 1/2 to 2 teaspoons cracked black pepper, 1 teaspoon baking powder, 3/4 teaspoon salt, 1/2 teaspoon baking soda
In another bowl, combine the eggs, yogurt, oil, milk, mustard, cheese and green onions.
2 beaten eggs, 8 ounces plain low-fat yogurt, 1/2 cup cooking oil, 1/4 cup milk, 1 tablespoon spicy brown mustard, 1 cup shredded cheddar cheese, 1/4 cup thinly sliced green onions
Add the wet ingredients to the dry ingredients and stir just until combined. Pour into the prepared loaf pan.
Bake until a tester inserted in the middle comes out clean, 45-50 minutes. Allow to cool for 10 minutes, then remove from pan to a wire rack to cool completely. Store any leftover bread wrapped in the refrigerator.
