Ingredients
1cupquinoa
2cupsvegetable broth
1/4cupextra virgin olive oil
1/4cupfresh lime juice
1teaspoonground cumin
1teaspoonsalt
Pinchof red pepper flakes
1/2cupcherry tomatoes,cut in half
1/4cupdiced red onion
1/4cupsliced green onions
1/4cupdiced red bell pepper
1/2 - 1avocadopitted, peeled and cubed
Chopped cilantro
Instructions
Rinse the quinoa very well.
1 cup quinoa
Place the quinoa and the vegetable broth in a pot over medium heat and bring to a boil. Reduce the het to medium low and cover the pot. Simmer until the quinoa is tender and the broth is absorbed, about 10-15 minutes. Set aside to cool.

To make the dressing, whisk together the olive oil, lime juice, cumin, salt and red pepper flakes.

Combine the quinoa, tomatoes, red onion, green onion, bell pepper and avocado in a large bowl. Pour the dressing over the top and gently stir to combine.
1/2 cup cherry tomatoes,, 1/4 cup diced red onion, 1/4 cup sliced green onions, 1/4 cup diced red bell pepper, 1/2 - 1 avocado
Serve topped with chopped cilantro, if desired.
