Ingredients
8ouncescream cheeseat room temperature
1/2cupbutterat room temperature
1 1/2cupsred velvet cake mixdry
1/2cuppowdered sugar
2tablespoonsbrown sugar
1/2cupmini chocolate chips
assorted cookies and crackersmy favorite was Vanilla Wafers
Instructions
In the bowl of a stand mixer, beat the cream cheese and butter until smooth. Add in the red velvet cake mix, the powdered sugar and the brown sugar. Beat until smooth and combined.
8 ounces cream cheese, 1/2 cup butter, 1 1/2 cups red velvet cake mix, 1/2 cup powdered sugar, 2 tablespoons brown sugar
Turn the mixture out onto a piece of plastic wrap. Wrap up into a ball and refrigerate for at least 2 hours.
Put the chocolate chips on a plate or in a shallow dish. Remove the cheese ball from the refrigerator and unwrap. Roll in the chocolate chips. (This might get messy!) Place on a serving plate and serve with cookies or graham crackers.

Notes
There is a small chance that the dry cake mix can contain harmful bacteria. If you are concerned about this, you can heat treat the mix before using. To do this, you can microwave the cake mix to 160ºF before using.
