Ingredients
Slaw
3cupscoleslaw mix
4tablespoonslight mayonnaise
2teaspoonsmustard
1/2teaspooncelery salt
Horseradish Mayo
1/2cuplight mayonnaise
2tablespoonsminced oil-packed sun-dried tomatoes
1tablespoonprepared horseradish
1/4teaspoongarlic powder
Pinchof red pepper flakes
Sandwiches
8slicesbread
Thinly sliced red onion
8ozthinly sliced deli roast beef
8slicesthin-sliced Colby-jack cheese
4tablespoonsbuttersoftened
Instructions
In a bowl, combine the slaw ingredients and mix to combine. Set aside.
Divide the roast beef into four portions and place a portion on the top of 4 of the slices of bread. Top with the red onions and the slaw.

Place the remaining 4 slices on top to form 4 sandwiches.
Spread the outside of each sandwich with the butter.

If using a panini press, grill one or two sandwiches at a time until the cheese is melted and the sandwich is golden brown. If using a skillet, add the sandwiches and cook until the bread is golden, then flip and cook the second side.
Cut in half to serve.
