Ingredients
3chicken breasts(about 8 oz each)
16ozfrozen corn
1(15 oz) canblack beansdrained and rinsed
1bunch cilantrochopped
1/2cupchopped red onion
Juice from 2 limes
2clovesgarlicminced
1teaspooncumin
1/2cupsour cream
1/2cupchopped cilantro
Salt and pepper
Instructions
Combine the chicken, corn, black beans, bunch of cilantro, red onion, lime juice, garlic and cumin in a freezer safe ziplock bag. Label and freeze.
3 chicken breasts, 16 oz frozen corn, 1 (15 oz) can black beans, 1 bunch cilantro, 1/2 cup chopped red onion, Juice from 2 limes, 2 cloves garlic, 1 teaspoon cumin
When ready to cook, spray the inside of a slow cooker with nonstick cooking spray.
Empty the contents of the bag into the slow cooker. Move the chicken into a single layer as much as possible.
Cook on low, just until the chicken is cooked through, 4-6 hours, depending on your slow cooker.
When the chicken is cooked, remove just the chicken from the slow cooker and shred using 2 forks. Return the chicken to the slow cooker. Add in the 1/2 cup sour cream and 1/2 cup cilantro and stir to combine. Season to taste with salt and pepper.

Serve the chicken over rice or with tortillas.
