Ingredients
Chocolate Sauce:
1/3cupunsweetened cocoa powder
1/2cupwater
3/4cupsugar
1/4teaspoonsalt
Graham Cracker Pancakes:
1 1/4cupsall-purpose flour
3/4cupfine graham cracker crumbsfrom about 6 full graham crackers
3tablespoonssugar
1tablespoonbaking powder
3/4teaspoonsalt
1 1/2cupsmilk
2large eggswhites and yolks separated
3tablespoonsvegetable oil
Marshmallow Sauce:
1cupmarshmallow creme
1-2tablespoonshot water
Instructions
Make the Chocolate Sauce:
In a saucepan, whisk together the cocoa powder and the water. Stir in the sugar and the salt and cook over medium heat. Bring to a boil, and let it boil for 3 minutes. Remove from the heat and let the sauce cool. (It will thicken slightly as it cools.)
Make the Pancakes:
In a large bowl, whisk together the flour, graham cracker crumbs, sugar, baking powder, and salt. In another bowl, (I like to use a large liquid measuring cup), mix together the milk, egg yolks, and oil. Pour the wet ingredients into the dry ingredients and mix just until combined.
Place the egg whites in another bowl. Use a hand mixer to beat the egg whites until they have stiff peaks. Gently for the egg whites into the pancake batter.
Heat a lightly oiled or buttered griddle over medium heat. Pour about 1/4 cup of the batter on the hot griddle and cook until browned, the flip and cook the second sauce. Continue with all of the batter.
Make the Marshmallow Sauce:
In a small bowl, stir the hot water into the marshmallow creme, about 1 teaspoon at a time, until the sauce is a pourable consistency.
To Serve:
Place a few pancakes on each plate and top with the chocolate sauce and the marshmallow sauce.
