Ingredients
1 1/2cupsall-purpose flour
3tablespoonsbrown sugar
1tablespoonbaking powder
1/2teaspoonsalt
1 1/4cupsbuttermilk
2eggs
3tablespoonsmelted butterplus more for the pan
1tablespoonvanilla extract
1 1/2cupsdiced strawberries
Instructions
In a large bowl, whisk together the flour, brown sugar, baking powder, and salt.
In another bowl, mix together the buttermilk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix just until combined. Add the diced strawberries and lightly fold them into the batter.
Heat a griddle or skillet. Lightly coat the pan with butter. Pour about 1/3 cup of batter onto the hot surface. Cook until bubbling and golden on the edges, then flip and cook until the second side is golden.
Remove and continue until all of the batter has been used.
